Spare ribs are not uncommon in various cuisines around the world, but in the east, paai gwat are roasted black and typically steamed with douchi or fermented black beans and sometimes sliced chilli.

Literally meaning 'row of bones', paai gwat come from the most inexpensive rack of pork ribs but are then cut into three to four inch pieces.

Savoury rather than the sweeter American rib variety, the taste is inexplicably Chinese and provide a meat fix when the chicken feet and dumplings become all too little.
