Pork & Shrimp Dumpling

 Pork and Shrimp Dumpling

These are small, steamed, traditional dumplings with either pork, prawns or both inside a thin wrapper of lye water dough.

The standard sui mai filling is a combination of ingredients, consisting primarily of seasoned ground pork, whole and chopped shrimp and Chinese black mushroom. The dumplings are usually garnished with an orange dot, made of crab roe or diced carrot.

Whilst certainly not bland, the humble sui mai is one of dim sum's standard dishes. It never fails to satisfy the urge for dumplings of some kind and partners up well with the other dumplings in the Series 1 family, the har gau.
