Chicken feet are deep fried, boiled, marinated in a black bean sauce and then steamed. The result is in a texture that is light and fluffy while moist and tender. That still doesn't take away the fact that this dish is the most likely to turn off dim sum virgins.

Fung zao (or another fantastic name for them: phoenix talons) are typically dark red in color with most of the edible parts consisting of skin and tendons.

The whole concept of eating chicken feet (which doesn't contain much meat at all) sounds mildly eyebrow-raising but trust us when we say it must rank among one of the best dim sum dishes. It's our personal favourite and we love pulling off the juicy, loose skin.

One thing we're not sure about however are another variety of fung zao - a plain, steamed chicken feet served with a vinegar dipping sauce.

We've also seen it as the rainbow-style chicken feet and though others swear by it, we're not sure about gnawing away at the tougher skin, particularly when this variety is served cold.
